Description
Nowadays, finding snacks that are both nutritious and delicious can be a challenge. However, with the growing trend of healthy eating and functional foods, protein blueberry muffins have emerged as a go-to option for those looking to satisfy their sweet tooth while nourishing their body.
Ingredients
Scale
- 1 cup rolled oats (or oat flour)
- 1/2 cup protein powder (vanilla or unflavored)
- 1/2 cup Greek yogurt (or unsweetened applesauce for a dairy-free option)
- 1/4 cup maple syrup or honey
- 1/2 cup almond flour or whole wheat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup fresh or frozen blueberries
- 2 large eggs (or flax eggs for a vegan version)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
- Combine Dry Ingredients: In a large mixing bowl, whisk together the oats (or oat flour), protein powder, almond flour (or whole wheat flour), baking powder, baking soda, cinnamon, and salt.
- Mix Wet Ingredients: In a separate bowl, whisk together the eggs, Greek yogurt, maple syrup (or honey), and vanilla extract until smooth.
- Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients and stir until fully combined. Be careful not to overmix, as this can result in dense muffins.
- Fold in Blueberries: Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.
- Fill Muffin Cups: Spoon the batter evenly into the muffin tin, filling each cup about 2/3 full.
- Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy: Serve the muffins warm, or store them in an airtight container for up to five days.
