  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/2 cup Greek yogurt (or unsweetened applesauce for a dairy-free option)
  • 1/4 cup maple syrup or honey
  • 1/2 cup almond flour or whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup fresh or frozen blueberries
  • 2 large eggs (or flax eggs for a vegan version)
  • 1/2 teaspoon vanilla extract

 


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the oats (or oat flour), protein powder, almond flour (or whole wheat flour), baking powder, baking soda, cinnamon, and salt.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, Greek yogurt, maple syrup (or honey), and vanilla extract until smooth.
  4. Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients and stir until fully combined. Be careful not to overmix, as this can result in dense muffins.
  5. Fold in Blueberries: Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.
  6. Fill Muffin Cups: Spoon the batter evenly into the muffin tin, filling each cup about 2/3 full.
  7. Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  8. Enjoy: Serve the muffins warm, or store them in an airtight container for up to five days.
