Instructions
- Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions. Reserve about ½ cup of the pasta water before draining.
- Prepare the Chicken:
- Slice the chicken breasts in half horizontally and pound them to an even thickness.
- Season the Panko bread crumbs with ½ teaspoon salt and ¼ teaspoon black pepper in a shallow bowl. Press the chicken breasts into the bread crumbs on both sides.
- Cook the Chicken:
- Heat the avocado oil in a heavy skillet over medium-high heat.
- Cook the chicken for 3-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the pan and set aside.
- Make the Lemon Garlic Sauce:
- In the same skillet, melt the butter over medium heat. Add the minced garlic, red pepper flakes, remaining salt, black pepper, lemon zest, and lemon juice. Stir and cook for about 30 seconds until fragrant.
- Add the cooked pasta to the skillet and toss to coat in the sauce. Pour in ¼ cup of the reserved pasta water and stir until the sauce is creamy. Add more pasta water as needed to achieve your desired consistency.
- Combine and Serve:
- Stir in the grated Parmesan cheese until well combined.
- Serve the pasta topped with sliced chicken and an extra squeeze of lemon juice, along with additional Parmesan cheese if desired.
