For the meatballs:

  • 1 lb ground beef (or a mix of beef and pork for extra flavor)

  • 1 egg

  • ½ cup gluten-free breadcrumbs (or almond flour for a low-carb version)

  • ¼ cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ cup chopped fresh parsley (optional)

For the sauce (optional):

  • 1 cup marinara sauce (make sure it’s gluten-free)


Instructions

  • Preheat the oven:
    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

  • Mix the meatball ingredients:
    In a large bowl, combine the ground meat, egg, gluten-free breadcrumbs (or almond flour), Parmesan cheese, garlic, oregano, basil, salt, pepper, and parsley (if using). Mix everything together until just combined—don’t overwork the meat to keep the meatballs tender.

  • Form the meatballs:
    Use your hands to shape the mixture into meatballs, about 1 to 1.5 inches in diameter. Place them evenly on the prepared baking sheet.

  • Bake the meatballs:
    Bake the meatballs in the preheated oven for 15-20 minutes, or until they’re golden brown and cooked through. You can check doneness by cutting one in half—there should be no pink in the center.

  • Serve with sauce (optional):
    If you’re using marinara sauce, you can heat it in a saucepan while the meatballs bake. Once the meatballs are cooked, serve them with a spoonful of the warm marinara sauce on top, or simply enjoy them on their own!
