Instructions

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente (typically 9-11 minutes).
  • Drain the pasta, reserving about 1 cup of pasta water. Set the pasta aside.

Step 2: Prepare the Shrimp

  • While the pasta is cooking, heat the olive oil and butter over medium-high heat in a large skillet.
  • Once the butter has melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute, or until the garlic is fragrant (be careful not to burn it!).
  • Add the shrimp to the pan, seasoning them with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp are pink and cooked through.

Step 3: Combine and Finish

  • Once the shrimp are cooked, add the white wine or chicken broth to the skillet to deglaze the pan, scraping up any bits from the bottom. Let the sauce simmer for another 2-3 minutes.
  • Add the cooked pasta to the skillet, tossing to combine with the shrimp and sauce. If the pasta seems dry, add some of the reserved pasta water to create a silky, smooth sauce.
  • Squeeze in the lemon juice and adjust seasoning as needed.
